The story of the oil
Hanukkah remembers events from more than two thousand years ago, when a small group of Jewish fighters known as the Maccabees won back the holy Temple in Jerusalem. As they rededicated it, the story goes, they found only enough sacred OIL to keep the lamp burning for a single day — yet by a MIRACLE it lasted EIGHT. That is why Hanukkah lasts eight nights, with one more candle of the MENORAH lit each evening using the helper SHAMASH.
Many of the customs echo that miracle of oil. The LATKES (potato pancakes) and SUFGANIYOT (jam doughnuts) are fried, and the festival is full of light, games and togetherness. Because the Jewish calendar follows the moon, Hanukkah falls on a different date each year, usually in late November or December.
