How is ice cream made?
Ice cream is mostly cream, milk and sugar, with flavour stirred in — but the real trick is how it's frozen. As the mixture chills it's churned (constantly stirred), which whips in tiny air bubbles and stops big ice crystals forming. That's what makes good ice cream smooth and scoopable rather than a solid block of ice.
People have enjoyed frozen treats for a very long time: flavoured ices were served in ancient China and Persia, and ice cream as we know it became popular in Europe in the 1600s and 1700s. A SORBET, by the way, is the dairy-free cousin — just fruit, sugar and water, with no cream at all.
